Ingredients

For the Fritters
  • 2 cups all-purpose flour sifted
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon plus extra for dusting
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 cup milk room temperature
  • 2 large eggs lightly beaten
  • ¼ cup granulated sugar
  • 2 medium apples peeled, cored, and diced
  • 1 teaspoon vanilla extract
  • 4 cups vegetable oil for frying
For the Glaze
  • 1 cup powdered sugar sifted
  • 2 tablespoons milk adjust for desired consistency
  • ½ teaspoon vanilla extract

Method

Prepare the Fritter Batter
  1. In a large mixing bowl, whisk together the sifted flour, baking powder, cinnamon, nutmeg, and salt until well combined. This ensures even distribution of the leavening agent and spices.
  2. In another bowl, mix the milk, beaten eggs, granulated sugar, and vanilla extract until smooth. This mixture will add moisture and sweetness to the fritters.
  3. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  4. Fold in the diced apples gently, ensuring they are evenly distributed throughout the batter.
Fry the Fritters
  1. In a large frying pan or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
  2. Once the oil is hot, drop spoonfuls of the batter (about 2 tablespoons each) into the oil, being careful not to overcrowd the pan.
  3. Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and cooked through. Use a slotted spoon to turn them.
  4. Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to absorb excess oil.
Make the Glaze
  1. In a small bowl, whisk together the sifted powdered sugar, milk, and vanilla extract until smooth. Adjust the milk to achieve your desired glaze consistency.
Serve
  1. Drizzle the glaze over the warm fritters or dip the fritters into the glaze for a more decadent treat. Optionally, dust with extra cinnamon.
  2. Serve immediately for the best texture and flavor.
