  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cinnamon
  • 1 tablespoon Brown sugar
  • 1 teaspoon Sea salt
Toppings
  • ½ cup Greek yogurt for topping
  • ¼ cup Chopped nuts (walnuts or pecans) for topping

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly. Scrub them under running water and cut into one-inch cubes.
  3. Toss sweet potatoes in a bowl with olive oil, cinnamon, brown sugar, and sea salt until evenly coated.
  4. Spread seasoned sweet potatoes onto a parchment-lined baking sheet in a single layer.
  5. Roast for 25-30 minutes, turning halfway, until tender and golden brown.
  6. Cool for a few minutes. Serve topped with Greek yogurt and chopped nuts.
