How to Make Cauliflower Turmeric Soup
- In a large pot over medium heat, warm the olive oil until it shimmers.
- Add the diced onion and sauté until it becomes translucent, about 5-7 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Sprinkle in the turmeric powder and add the chopped cauliflower. Stir everything together and cook for 5 minutes.
- Carefully pour the vegetable broth into the pot and bring it to a boil.
- Lower the heat and let the mixture simmer for 20 minutes, or until the cauliflower is fork-tender.
- Using an immersion blender, puree the soup until it's smooth and creamy.
- Stir in the coconut milk, then season with salt and pepper to taste.
- Warm the soup through for a few minutes, then ladle it into warm bowls and serve.
