  • 1 medium Onion diced
  • 4 cloves Garlic minced
  • 1 tablespoon Fresh ginger grated
  • 1 teaspoon Turmeric powder
  • 4 cups Vegetable broth
  • 1 can Coconut milk
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil

Method
 

How to Make Cauliflower Turmeric Soup
  1. In a large pot over medium heat, warm the olive oil until it shimmers.
  2. Add the diced onion and sauté until it becomes translucent, about 5-7 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Sprinkle in the turmeric powder and add the chopped cauliflower. Stir everything together and cook for 5 minutes.
  5. Carefully pour the vegetable broth into the pot and bring it to a boil.
  6. Lower the heat and let the mixture simmer for 20 minutes, or until the cauliflower is fork-tender.
  7. Using an immersion blender, puree the soup until it's smooth and creamy.
  8. Stir in the coconut milk, then season with salt and pepper to taste.
  9. Warm the soup through for a few minutes, then ladle it into warm bowls and serve.
