Method
 

Cooking Instructions
  1. Preheat the oven to 400°F.
  2. Wash and cut the baby potatoes, halving or quartering them.
  3. Slice the smoked sausage into ¼-inch thick rounds.
  4. Mix the ranch seasoning, garlic powder, onion powder, and black pepper in a small bowl.
  5. Drizzle olive oil over the halved or quartered potatoes in a large bowl, then sprinkle with half of the seasoning mixture. Toss everything until the potatoes are evenly coated.
  6. Prepare your baking sheet by lining it with parchment paper or giving it a light grease.
  7. Spread the seasoned potatoes in a single layer on the baking sheet, then scatter the sausage pieces on top.
  8. Roast for 35-40 minutes, stirring halfway through, until the potatoes are golden brown and tender.
  9. Sprinkle the shredded cheddar cheese over the roasted potatoes and sausage, returning to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh chopped parsley and serve hot, adding a dollop of sour cream if desired.
