For the Garlic Yogurt Sauce
  • 1 cup Greek yogurt provides a creamy base.

  • 1 tablespoon Olive oil enriches the flavor.
  • 2 tablespoon Fresh dill or mint, chopped brings herby freshness.
  • 1 teaspoon Salt essential for flavor.
  • ½ teaspoon Black pepper offers subtle spice.

Method
 

Preparation
  1. In a large bowl, mix together the ground chicken, grated onion, minced garlic, chopped parsley, cilantro, breadcrumbs, egg, cumin, coriander, paprika, salt, black pepper, and cayenne if desired until well incorporated.
  2. Cover the bowl and refrigerate the kofta mixture for 15-20 minutes.
  3. Once chilled, divide the mixture into 8-10 equal portions and shape each into elongated ovals on skewers or patties.
  4. In a small bowl, whisk together the Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill or mint, salt, and pepper, and set aside in the fridge.
  5. Preheat grill to medium-high heat and brush the grates with olive oil.
  6. Cook the shaped kofta on the grill for 10-12 minutes, turning every 3-4 minutes until charred and cooked through.
  7. Alternatively, heat olive oil in a skillet and cook the kofta for 10-12 minutes until golden brown.
  8. Plate the hot Chicken Kofta and drizzle with garlic yogurt sauce or serve on the side.
