- In a large bowl, mix together the ground chicken, grated onion, minced garlic, chopped parsley, cilantro, breadcrumbs, egg, cumin, coriander, paprika, salt, black pepper, and cayenne if desired until well incorporated.
- Cover the bowl and refrigerate the kofta mixture for 15-20 minutes.
- Once chilled, divide the mixture into 8-10 equal portions and shape each into elongated ovals on skewers or patties.
- In a small bowl, whisk together the Greek yogurt, minced garlic, lemon juice, olive oil, chopped dill or mint, salt, and pepper, and set aside in the fridge.
- Preheat grill to medium-high heat and brush the grates with olive oil.
- Cook the shaped kofta on the grill for 10-12 minutes, turning every 3-4 minutes until charred and cooked through.
- Alternatively, heat olive oil in a skillet and cook the kofta for 10-12 minutes until golden brown.
- Plate the hot Chicken Kofta and drizzle with garlic yogurt sauce or serve on the side.
