  • 1 cup Buttermilk
  • ½ cup Vegetable oil
  • 2 teaspoon Vanilla extract

Method
 

Cupcake Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with festive liners.
  2. Whisk together in a large bowl the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Beat the eggs with the buttermilk, vegetable oil, and vanilla extract in another bowl until frothy.
  4. Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool the cupcakes completely before frosting and swirl on your favorite peppermint frosting, then sprinkle crushed candy canes on top.
