Preparation
- Preheat the oven to 350°F (175°C). Prepare your 8×8 inch baking dish by greasing it or lining it with parchment paper for easy removal.
- Combine the flour and granulated sugar in a mixing bowl. Use a pastry cutter or your fingers to cut in the cold butter until the mixture is crumbly. Press this blend firmly into the bottom of your prepared dish and bake for 15 minutes, until it's lightly golden.
- Whisk together the eggs, fresh lemon juice, and the remaining sugar in another bowl until the mixture is nice and frothy. Carefully sift in the flour to thicken your delightful filling.
- Pour the lemon mixture over the baked crust and return it to the oven. Bake for an additional 20-25 minutes, until set but with a slight jiggle in the center.
- Cool completely at room temperature before slicing into squares. Dust with powdered sugar just before serving.
