How to Make Christmas Glazed White Chocolate Raspberry Loaf
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or cooking spray.
- Whisk together the dry ingredients in a large bowl: 2 cups flour, 1 cup granulated sugar, ½ cup brown sugar, 2 teaspoon baking powder, and ½ teaspoon salt.
- Cream the softened butter with the sugars in another bowl until fluffy. Add the 3 large eggs, one at a time, mixing well after each addition, then stir in 1 teaspoon vanilla extract.
- Combine the dry mixture with the wet ingredients. Gently mix until just combined.
- Fold in the 1 cup of fresh raspberries and ½ cup of white chocolate chips, being careful not to break the raspberries.
- Pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool your loaf slightly, then transfer it to a wire rack. Drizzle melted white chocolate over the top if desired.
