How to Make Christmas Spumoni Cookies
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
- Beat in the large eggs one at a time, along with the vanilla extract, until fully incorporated and smooth.
- In another bowl, whisk together the all-purpose flour, baking powder, and unsweetened cocoa powder. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in the chopped Maraschino cherries and pistachios.
- Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheets, about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are golden brown while the centers remain soft. Let them cool on wire racks.
