How to Make Christmas Ube Crinkle Cookies
  1. Preheat your oven to 350°F (175°C) and get two baking sheets ready by lining them with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, and salt in a bowl.
  3. Cream the ube halaya and granulated sugar in a large bowl until fluffy. Add the eggs one at a time, mixing well after each addition, and finish with a splash of vanilla extract.
  4. Incorporate the dry ingredients gradually into the wet mixture until just combined.
  5. Chill the dough in the fridge for at least one hour.
  6. Roll tablespoons of the chilled dough into balls, then coat each ball generously with powdered sugar.
  7. Bake for 12-15 minutes until the edges are just set and the centers remain soft.
