  • 1 can whole peeled tomatoes preferably San Marzano for best flavor
  • 2 tablespoons olive oil extra virgin for richer flavor
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon dried oregano or 1 tablespoon of fresh oregano, chopped
  • 1 teaspoon dried basil or 1 tablespoon of fresh basil, chopped
  • ½ teaspoon garlic powder or 1 clove of fresh garlic, minced
  • ¼ teaspoon black pepper freshly ground for best flavor
  • ¼ teaspoon red pepper flakes optional, for heat

Method

Prepare the Sauce
  1. In a medium saucepan, heat the olive oil over medium heat. This helps to release the flavors of the herbs.
  2. Add the whole peeled tomatoes to the saucepan. Use a wooden spoon to break them up into smaller pieces. This will create a chunky texture.
  3. Stir in the sugar, salt, dried oregano, dried basil, garlic powder, black pepper, and red pepper flakes (if using). These ingredients will enhance the sauce's flavor.
  4. Bring the mixture to a gentle simmer. This allows the flavors to meld together. Reduce the heat to low and let it simmer uncovered for about 20 minutes, stirring occasionally.
  5. After 20 minutes, the sauce should have thickened slightly. If you prefer a smoother sauce, use a blender or immersion blender to puree it to your desired consistency.
  6. Taste the sauce and adjust seasoning if necessary. More salt, sugar, or herbs can be added according to your preference.
