- Preheat oven—Set your oven to 400°F (200°C). While it warms up, spray a baking dish with nonstick cooking spray.
- Season the chicken—Take your boneless, skinless chicken breasts and sprinkle them generously with salt and pepper. Cut them into bite-sized pieces.
- Mix the sauce—In a bowl, combine melted unsalted butter, low-sodium soy sauce, minced garlic, parsley, and thyme. Stir until well blended.
- Coat the chicken—Toss the bite-sized chicken pieces in the sauce until fully coated.
- Bake—Transfer the sauce-covered chicken to the baking dish and bake for 20-25 minutes until golden brown and reaches 165°F (74°C).
- Serve warm—Serve the chicken bites warm and drizzle with leftover sauce from the baking dish.
