- Preheat your oven to 325°F (160°C).
- Season the beef roast generously with salt and pepper on all sides.
- Sear the roast in a skillet over medium-high heat until golden brown on all sides, about 3-4 minutes per side.
- Combine in a bowl the cranberry sauce, balsamic vinegar, minced garlic, and chopped rosemary.
- Place the seared roast in a roasting pan, then pour the cranberry balsamic mixture over it.
- Cover the pan with foil and roast in the oven for about 3 hours or until the beef is tender.
- Baste occasionally for extra flavor.
