Method
 

Cooking Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast generously with salt and pepper on all sides.
  3. Sear the roast in a skillet over medium-high heat until golden brown on all sides, about 3-4 minutes per side.
  4. Combine in a bowl the cranberry sauce, balsamic vinegar, minced garlic, and chopped rosemary.
  5. Place the seared roast in a roasting pan, then pour the cranberry balsamic mixture over it.
  6. Cover the pan with foil and roast in the oven for about 3 hours or until the beef is tender.
  7. Baste occasionally for extra flavor.
