Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to an even thickness
  • 1 teaspoon salt for seasoning
  • ½ teaspoon black pepper freshly ground
  • 1 tablespoon olive oil for cooking
  • ½ cup chicken broth low sodium preferred
  • 1 tablespoon butter for flavor
  • 1 teaspoon garlic powder for seasoning
For the Mashed Potatoes
  • 2 pounds russet potatoes peeled and cut into chunks
  • ½ cup milk warm
  • ¼ cup butter unsalted, melted
  • 1 teaspoon salt for flavor
  • ¼ teaspoon black pepper to taste
For the Gravy
  • 2 tablespoons all-purpose flour for thickening
  • 1 cup chicken broth low sodium
  • 1 tablespoon soy sauce for depth of flavor
  • 1 teaspoon black pepper to taste

Method

Prepare the Chicken
  1. Season the chicken breasts with salt, pepper, and garlic powder on both sides. This will enhance the flavor of the chicken.
  2. In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts.
  3. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked and safe to eat.
  4. Remove the chicken from the skillet and let it rest while you prepare the gravy.
Make the Gravy
  1. In the same skillet, add the butter and let it melt. Then, whisk in the flour to create a roux, cooking for about 1 minute until lightly golden.
  2. Gradually add the chicken broth while whisking continuously to avoid lumps. Add soy sauce and black pepper, and let the mixture simmer until thickened, about 3-5 minutes.
Prepare the Mashed Potatoes
  1. In a large pot, add the peeled and chopped potatoes and cover with cold water. Add a pinch of salt.
  2. Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain the potatoes and return them to the pot. Add warm milk, melted butter, salt, and pepper.
  4. Mash the potatoes with a potato masher until smooth and creamy. Adjust seasoning to taste.
Serve
  1. Slice the chicken and serve it over a generous scoop of mashed potatoes. Drizzle with the gravy.
