Method
Prepare the Chicken
Season the chicken breasts with salt, pepper, and garlic powder on both sides. This will enhance the flavor of the chicken.
In a large skillet, heat olive oil over medium heat. Once hot, add the chicken breasts.
Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). This ensures the chicken is fully cooked and safe to eat.
Remove the chicken from the skillet and let it rest while you prepare the gravy.
Make the Gravy
In the same skillet, add the butter and let it melt. Then, whisk in the flour to create a roux, cooking for about 1 minute until lightly golden.
Gradually add the chicken broth while whisking continuously to avoid lumps. Add soy sauce and black pepper, and let the mixture simmer until thickened, about 3-5 minutes.
Prepare the Mashed Potatoes
In a large pot, add the peeled and chopped potatoes and cover with cold water. Add a pinch of salt.
Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.
Drain the potatoes and return them to the pot. Add warm milk, melted butter, salt, and pepper.
Mash the potatoes with a potato masher until smooth and creamy. Adjust seasoning to taste.
Serve
Slice the chicken and serve it over a generous scoop of mashed potatoes. Drizzle with the gravy.
Enjoy your comforting chicken and mashed potatoes!
For extra flavor, consider adding herbs like thyme or rosemary to the chicken while cooking. You can also use a hand mixer for the mashed potatoes for a fluffier texture.
