How to Make
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Wash and dry the baby potatoes thoroughly, then cut them in half.
- Chop the bacon into small, bite-sized pieces.
- Combine the halved potatoes in a large mixing bowl with olive oil, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet.
- Scatter the chopped bacon evenly over the potatoes.
- Roast in the preheated oven for 30-35 minutes, flipping halfway through.
- Drizzle honey over the potatoes and bacon during the last 5 minutes of roasting.
- Remove from the oven and let cool slightly.
- Sprinkle freshly chopped parsley over the top before serving.
