- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the potatoes, then slice them thinly, about ⅛-inch thick.
- In a mixing bowl, combine the potato slices with olive oil, salt, black pepper, and half of the Parmesan cheese, tossing gently until coated.
- Arrange half of the potato slices on the baking sheet in overlapping stacks. Sprinkle with more Parmesan, then layer the remaining potato slices on top.
- Bake for 30-35 minutes, or until golden brown and crispy, flipping gently midway for even cooking.
- Allow the stacks to cool slightly before serving. Drizzle with extra olive oil or add more cheese if desired.
