Method
 

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the potatoes, then slice them thinly, about ⅛-inch thick.
  3. In a mixing bowl, combine the potato slices with olive oil, salt, black pepper, and half of the Parmesan cheese, tossing gently until coated.
  4. Arrange half of the potato slices on the baking sheet in overlapping stacks. Sprinkle with more Parmesan, then layer the remaining potato slices on top.
  5. Bake for 30-35 minutes, or until golden brown and crispy, flipping gently midway for even cooking.
  6. Allow the stacks to cool slightly before serving. Drizzle with extra olive oil or add more cheese if desired.
