How to Make Crispy Smashed Potatoes
  1. Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly.
  2. Preheat your oven to 450°F (232°C).
  3. Smash each potato gently with the bottom of a glass or potato masher until they're about half an inch thick.
  4. Arrange the smashed potatoes on a parchment-lined baking sheet. Drizzle them with olive oil and season generously with salt and pepper.
  5. Bake for 25-30 minutes or until crispy, flipping halfway through.
  6. Caramelize the onions in a skillet over medium heat with a splash of olive oil for 15-20 minutes.
  7. Top the roasted potatoes with caramelized onions and generous dollops of sour cream before serving.
  8. Optional: Sprinkle fresh herbs over the top for a burst of color and added flavor.
