For the Sauce
  • 1 cup BBQ sauce your favorite BBQ sauce
  • 1 cup pineapple chunks
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and black pepper to taste
For Thickening the Sauce (Optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water to mix with cornstarch
For Garnish
  • sliced green onions or chopped cilantro for a fresh touch

How to Make
  1. Season the chicken by placing it in the slow cooker and adding a sprinkle of salt and black pepper.
  2. Mix the BBQ sauce, pineapple chunks, soy sauce, garlic powder, and onion powder in a bowl. Pour this mixture over the chicken.
  3. Cook the chicken on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  4. Shred the cooked chicken using two forks and return it to the sauce.
  5. Thicken the sauce (optional) by whisking together the cornstarch and cold water to form a slurry. Stir into the crockpot and cook for an additional 10 to 15 minutes.
  6. Garnish with sliced green onions or chopped cilantro if desired.
