  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper or to taste
  • 1 tablespoon fresh rosemary or thyme for a fresh aroma
For the Finish
  • 1 cup feta cheese crumbled, for topping

Method
 

Steps
  1. Preheat your oven to 425°F (220°C).
  2. Combine chopped Yukon Gold potatoes with olive oil, minced garlic, salt, pepper, and your choice of herbs in a large bowl. Toss together until coated.
  3. Spread the seasoned potatoes evenly across a baking sheet lined with parchment paper.
  4. Roast for 20-25 minutes until golden brown and tender.
  5. Sprinkle crumbled feta cheese over the warm potatoes and return to the oven for another 5-10 minutes until melted and bubbly.
  6. Cool slightly before serving to allow flavors to meld.
