  • 2 cups fresh spinach
  • 8 oz cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
For the Steak
  • 1 lb flank steak flattened
  • 2 tablespoons olive oil for sautéing
  • 2 tablespoons balsamic vinegar for drizzling

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Sauté the spinach in a skillet with olive oil over medium heat until wilted, about 2 minutes.
  3. Combine sautéed spinach with cream cheese, mozzarella, garlic powder, salt, and pepper.
  4. Flatten the flank steak to about half an inch thick using a meat mallet.
  5. Spread the spinach mixture evenly over the flattened steak and roll tightly, securing with kitchen twine or toothpicks.
  6. Place the pinwheels in a greased baking dish and bake for 25-30 minutes or until cooked through.
  7. Serve drizzled with balsamic vinegar.
