- Preheat your oven to 400°F (200°C).
- Generously season the chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sear the chicken for about 5 minutes on each side, until golden brown.
- Add the sliced onions to the same skillet and sauté for 10-12 minutes until they’re caramelized and translucent.
- In a large bowl, mix together the cooked orzo, sautéed onions, soy sauce, chicken broth, and the seasoned chicken. Gently fold to combine.
- Pour your mixture into a prepared baking dish and cover it with foil. Bake for 25 minutes.
- After 25 minutes, remove the foil and sprinkle the mozzarella and cheddar cheeses on top. Bake uncovered for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Garnish with fresh parsley or thyme just before serving.
