  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon pepper

  • 2 cloves fresh garlic
  • 2 medium onions
For the Sauce
  • 2 tablespoons low-sodium soy sauce
  • 2 cups low-sodium chicken broth
For the Pasta
  • 1 cup orzo pasta
For the Cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
For Cooking
  • 2 tablespoons olive oil
For Garnish
  • 2 tablespoons fresh parsley or thyme

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Generously season the chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sear the chicken for about 5 minutes on each side, until golden brown.
  3. Add the sliced onions to the same skillet and sauté for 10-12 minutes until they’re caramelized and translucent.
  4. In a large bowl, mix together the cooked orzo, sautéed onions, soy sauce, chicken broth, and the seasoned chicken. Gently fold to combine.
  5. Pour your mixture into a prepared baking dish and cover it with foil. Bake for 25 minutes.
  6. After 25 minutes, remove the foil and sprinkle the mozzarella and cheddar cheeses on top. Bake uncovered for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  7. Garnish with fresh parsley or thyme just before serving.
