Ingredients

  • 2 pounds ripe tomatoes preferably Roma or San Marzano, diced
  • 4 cloves garlic minced
  • 1 medium onion finely chopped
  • 1 tablespoon olive oil extra virgin for best flavor
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • 1 teaspoon sugar optional, to balance acidity
  • ¼ cup fresh basil chopped, plus more for garnish
  • 1 teaspoon dried oregano or 1 tablespoon fresh, chopped
  • 1 tablespoon balsamic vinegar optional, for depth of flavor

Method

Prepare the Ingredients
  1. Wash the tomatoes thoroughly under cold water. Remove the stems and any blemishes, then dice them into small pieces. This helps release their juices during cooking.
  2. Peel and finely chop the onion and garlic. The onion adds sweetness and depth, while garlic provides aromatic flavor.
  3. Chop the fresh basil and set aside for later use.
Cook the Base
  1. In a large saucepan, heat the olive oil over medium heat. This oil will serve as the base for the sauce and help sauté the aromatics.
  2. Add the chopped onion to the pan and sauté for about 5 minutes, or until translucent. Stir occasionally to prevent burning.
  3. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant. Be careful not to let the garlic brown, as it can become bitter.
Add Tomatoes and Seasonings
  1. Add the diced tomatoes to the saucepan. Stir to combine with the onion and garlic mixture.
  2. Season with salt, black pepper, and sugar (if using). The sugar helps to balance the acidity of the tomatoes.
  3. Bring the mixture to a gentle simmer. This allows the flavors to meld together.
Simmer the Sauce
  1. Reduce the heat to low and let the sauce simmer uncovered for about 20-25 minutes, stirring occasionally. This will help thicken the sauce and concentrate the flavors.
  2. If the sauce becomes too thick, you can add a splash of water or broth to reach your desired consistency.
Finish the Marinara
  1. Once the sauce has thickened, stir in the chopped basil, dried oregano, and balsamic vinegar (if using). Cook for an additional 2-3 minutes to allow the herbs to infuse their flavor.
  2. Taste and adjust seasoning if necessary. You can add more salt, pepper, or sugar to suit your preference.
  3. If you prefer a smoother sauce, use a blender or immersion blender to puree the sauce to your desired consistency.
Serve
  1. Serve the marinara sauce over your favorite pasta, or use it as a base for pizza or other dishes. Garnish with additional fresh basil if desired.

Notes
