  • 0.5 cups unsulfured molasses
  • 0.5 cups softened butter
  • 0.5 cups granulated sugar
  • 0.5 cups brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
For the Buttercream Filling
  • 2 cups powdered sugar
  • 0.5 cups unsalted butter
  • 1 teaspoon vanilla extract

Method
 

Making the Cookies
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Whisk together the flour, ground ginger, ground cinnamon, baking soda, and salt in a bowl.
  3. Cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and unsulfured molasses, mixing until well combined.
  5. Incorporate the dry ingredients gradually into the wet mixture, stirring until fully blended.
  6. Drop heaping tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
  7. Bake for 10-12 minutes until the edges are firm but the centers remain soft.
  8. Cool the cookies completely on wire racks before frosting.
Making the Buttercream Filling
  1. In a bowl, beat the unsalted butter until creamy.
  2. Gradually add powdered sugar and vanilla extract, beating until smooth and fluffy.
  3. Spread the buttercream frosting between two cookies to create a sandwich.
