Preparation
  1. In a bowl, combine olive oil, minced garlic, mixed herbs, salt, and pepper. Add the chicken breasts, ensuring they're well coated. Cover and let them marinate in the fridge for at least 30 minutes for the best flavor.
  2. Preheat your oven to 425°F (220°C). In a mixing bowl, toss sweet potato fries with olive oil, salt, and pepper until they’re evenly coated.
  3. Spread the seasoned sweet potato fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping them halfway through, until they appear golden brown and crispy.
  4. Heat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through, reaching an internal temperature of 165°F (74°C).
  5. In a bowl, gently combine diced avocados with lime juice, salt, and pepper to make the avocado salsa.
  6. Slice the grilled chicken and layer it over the sweet potato fries at the bottom of each bowl. Top with the avocado salsa and serve.
