- Add the chopped onion and minced garlic to the skillet; sauté until the onion is translucent, about 3 minutes.
- Stir in the canned diced tomatoes, including their juices, and let the mixture simmer for 5 minutes.
- Add the orzo pasta, water or broth, dried oregano, salt, and pepper. Stir well to combine.
- Bring everything to a gentle boil, then reduce heat to low and cover. Simmer for about 10 minutes, or until the orzo is tender.
- Serve the dish hot, garnished with fresh herbs if desired.
