How to Make Homemade Red Velvet Brownie Bites
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. Melt butter in a medium bowl and mix in sugar, cocoa powder, vanilla, food coloring, salt, espresso powder, vinegar, and then add eggs. Fold in flour until just mixed.
  3. Beat cream cheese with sugar and vanilla until smooth, then fold in egg yolk.
  4. Spoon brownie batter into muffin cups halfway, add cream cheese filling, then top with more brownie batter. Swirl with a toothpick.
  5. Bake for about 12 minutes until tops are set and centers remain soft.
  6. Cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
