- In a small bowl, combine honey, soy sauce, minced garlic, olive oil, paprika, thyme, salt, and black pepper. Whisk until everything is beautifully mixed and the flavors meld together.
- Place the chicken breasts in a shallow dish and pour the marinade over them. Let it sit in the refrigerator for at least 30 minutes, or up to 8 hours.
- Preheat your oven to 400°F.
- On a lined baking sheet, spread out the cubed sweet potatoes. Drizzle with olive oil and season with salt and pepper.
- Bake the sweet potatoes for about 15 minutes, until they begin to soften.
- Push the sweet potatoes to one side and arrange the marinated chicken on the other side, with green beans around them.
- Pour any remaining marinade over the chicken and vegetables.
- Return the baking sheet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F.
