Method

How to Make Honey Glazed Crispy Pork Belly
  1. Score the skin of the pork belly in a crisscross pattern.
  2. Combine kosher salt, cumin, smoked paprika, garlic powder, and cayenne powder in a small bowl.
  3. Rub the spice mixture all over the pork belly and refrigerate it for at least 30 minutes.
  4. Bring the pork belly to room temperature before cooking. Preheat the oven to 350°F.
  5. Place the pork belly on a baking tray lined with parchment paper, skin-side up. Roast for 60 minutes.
  6. Mix honey and dry sherry in a small bowl to create the glaze.
  7. Baste the pork belly with the honey-sherry mixture and lower the oven temperature to 250°F. Cook for an additional 20 minutes.
  8. Baste again and cook for 10 more minutes.
  9. Allow the pork belly to rest for a few minutes before slicing.
