For the Crust
  • 1 cups chocolate graham cracker crumbs or regular graham crackers
  • 0.5 cups unsalted butter melted
For the Filling
  • 16 oz cream cheese softened
  • 0.5 cups sour cream or Greek yogurt
  • 1 cups granulated sugar or coconut sugar
  • 0.5 cups cocoa powder Dutch-processed for richer flavor
  • 3 large eggs room temperature
  • 1 cups semi-sweet chocolate chips or dark chocolate chips

Method
 

Directions
  1. Preheat your oven to 325°F (160°C).
  2. Combine chocolate graham cracker crumbs and melted butter in a bowl, mixing until evenly coated. Press into the bottom of a springform pan. Bake for 10 minutes.
  3. Beat the cream cheese in a large bowl until smooth. Add sugar, sour cream, and cocoa powder; mix until well combined. Incorporate eggs one at a time.
  4. Fold in semi-sweet chocolate chips and pour over the prepared crust.
  5. Bake for about an hour, until edges are set and center is slightly jiggly.
  6. Cool at room temperature, then refrigerate for at least four hours or overnight before serving.
