How to Make Juicy Turkey Brine
  1. In a large pot, bring 1 gallon of water, kosher salt, brown sugar, black peppercorns, garlic, onion, citrus slices, and herbs to a boil. Stir until everything is dissolved and fragrant, taking about 5-10 minutes.
  2. Once boiling, allow the brine to cool completely; you can speed this up by adding 1 gallon of cold water or ice.
  3. Using a brining bag, bucket, or cooler, carefully submerge the thawed turkey in the brine, ensuring every part is covered.
  4. Refrigerate or keep the cooler at a safe temperature for 12 to 24 hours.
  5. After brining, remove the turkey and rinse it well under cold water. Pat it dry thoroughly.
  6. Roast your turkey using your preferred method without adding more salt.
  7. Allow the turkey to rest for 20–30 minutes after roasting.
