- In a medium saucepan, mix the fresh lemon juice, lemon zest, water, and sliced jalapeños. Stir gently to blend these vibrant flavors.
- Bring the mixture to a gentle boil, then reduce the heat. Let it simmer for about 10 minutes.
- If you prefer a smoother jelly, strain out the jalapeños and zest using a fine mesh sieve.
- Sprinkle the powdered fruit pectin into the saucepan, stirring to dissolve completely. Bring this mixture to a rolling boil while stirring constantly.
- Pour in the granulated sugar all at once and stir invigoratingly. Allow it to return to a rolling boil for one full minute.
- Once removed from heat, use a spoon to skim any foam that's formed on top.
- Carefully pour the hot jelly into sterilized jars, leaving about ¼-inch headspace.
- Secure the jar lids and let them cool completely at room temperature.
