- In a mixing bowl, mix together the cream cheese, cheddar cheese, diced jalapenos, and green onions. Stir until everything is smooth and well combined.
- Lay an egg roll wrapper flat on a clean surface. Spoon 1 tablespoon of the cheesy filling into the center. Fold the bottom corner over the filling, tuck in the sides, then roll tightly, sealing the top corner with a little water.
- In a deep skillet, pour in vegetable oil and heat over medium-high heat until it reaches about 350°F (175°C).
- Carefully place the egg rolls into the hot oil. Fry them for about 3-4 minutes on each side, or until they turn a beautiful golden brown.
- Once cooked, use a slotted spoon to remove the egg rolls from the oil. Place them on paper towels to absorb any excess grease.
