How to Make Mini Jalapeno Popper Egg Rolls
- In a mixing bowl, mix together the cream cheese, cheddar cheese, diced jalapenos, and green onions. Stir until smooth and well combined.
- Lay an egg roll wrapper flat, spoon 1 tablespoon of filling into the center. Fold the bottom corner over the filling, tuck in the sides, then roll tightly, sealing the top corner with water.
- In a deep skillet, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C).
- Carefully place egg rolls into the hot oil. Fry for 3-4 minutes on each side until golden brown.
- Remove egg rolls with a slotted spoon and drain on paper towels to absorb excess grease.
