Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut the acorn squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil over each half, then season with salt, pepper, oregano, and thyme.
  4. Sprinkle a layer of Parmesan cheese on top of the seasoned squash halves.
  5. Place the squash cut-side down on a lined baking sheet and roast for 25-30 minutes.
  6. Flip the squash over so the cut side is facing up, add more Parmesan, then roast for an additional 10 minutes.
  7. Allow the squash to cool slightly before serving.
