  • 1 cup Unsalted butter softened
  • ¾ cup Granulated sugar
  • ¾ cup Brown sugar packed
  • 1 cup Creamy peanut butter
  • 1 large Egg
For the Filling
  • 1 cup Jelly or jam any flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Whisk together flour, baking soda, and salt in a bowl.
  3. Beat the softened butter, granulated sugar, brown sugar, and peanut butter until creamy, about 2-3 minutes.
  4. Incorporate the large egg into the peanut butter mixture until fully combined.
  5. Gradually combine the dry ingredients into the wet mixture until just blended.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them two inches apart.
  7. Bake for 10-12 minutes until edges turn golden brown and centers remain soft.
  8. Cool cookies slightly, then spread jelly on half and create sandwiches with the other half.
