  • 1 cup Creamy peanut butter
  • 1 large Large egg
For the Filling
  • 1 cup Jelly or jam your favorite flavor

How to Make Peanut Butter and Jelly Cookie Sandwiches
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, beat together the softened butter, granulated sugar, brown sugar, and creamy peanut butter until light and fluffy.
  4. Add the large egg and mix until well incorporated.
  5. Gradually fold the dry ingredients into the wet mixture until just blended.
  6. Scoop out portions of dough and place them onto the prepared baking sheets, leaving about two inches of space between them.
  7. Bake for 10-12 minutes until edges are golden and centers are soft and chewy.
  8. Allow cookies to cool slightly then spread jelly on half of the cookies and top with another cookie.
