How to Make Peanut Butter and Jelly Cookie Sandwiches
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt.
- In a separate bowl, beat together the softened butter, granulated sugar, brown sugar, and creamy peanut butter until light and fluffy.
- Add the large egg and mix until well incorporated.
- Gradually fold the dry ingredients into the wet mixture until just blended.
- Scoop out portions of dough and place them onto the prepared baking sheets, leaving about two inches of space between them.
- Bake for 10-12 minutes until edges are golden and centers are soft and chewy.
- Allow cookies to cool slightly then spread jelly on half of the cookies and top with another cookie.
