How to Make Pesto Grilled Shrimp
- In a mixing bowl, whisk together the basil pesto, freshly squeezed lemon juice, and extra virgin olive oil until well blended.
- Add the peeled and deveined shrimp to the marinade, tossing them gently to coat each piece. Let them marinate for at least 30 minutes.
- Preheat your grill to medium-high heat, aiming for about 400°F.
- Thread the marinated shrimp onto the soaked wooden skewers, aiming for 5-6 shrimp per skewer.
- Place the skewers on the grill and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.
- Remove the shrimp from the grill and serve immediately, drizzled with additional pesto.
