- Begin by heating the vegetable oil in a large skillet or wok over medium-high heat.
- Add the thinly sliced pork to the hot pan. Stir-fry until browned and cooked through, about 3-5 minutes.
- Toss in the mixed vegetables, minced garlic, and chopped green onions. Stir-fry for an additional 2-3 minutes.
- Push the pork and veggies to one side of the pan. Crack the eggs into the empty side and scramble until fully cooked, about 1-2 minutes.
- Add the cooked rice into the skillet, breaking up any clumps and stirring until evenly distributed.
- Drizzle the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir thoroughly.
- Taste and adjust the salt and pepper as needed. Serve hot, garnished with extra green onions.
