Ingredients

  • 4 cups Cooked rice Use day-old rice for the best texture.
For the Pork
  • 1 pound Pork tenderloin Thinly sliced for quick cooking.
For the Sauces
  • 3 tablespoons Soy sauce Low-sodium options are great for health-conscious cooks.
  • 2 tablespoons Oyster sauce If you don’t have it, hoisin sauce works too.
  • 1 tablespoon Sesame oil A little goes a long way.
For the Vegetables
  • 2 cups Mixed vegetables A blend of peas, carrots, and corn.
  • 3 stalks Green onions Chopped for garnish.
  • 2 cloves Garlic Freshly minced.
For the Eggs
  • 2 large Eggs Scramble them right in the pan.
For Cooking
  • 1 teaspoon Ground black pepper Adjust to taste.
  • 2 tablespoons Vegetable oil High smoke point oil for frying.
  • 1 teaspoon Salt Season to taste.

Method
 

Cooking Instructions
  1. Begin by heating the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the thinly sliced pork to the hot pan. Stir-fry until browned and cooked through, about 3-5 minutes.
  3. Toss in the mixed vegetables, minced garlic, and chopped green onions. Stir-fry for an additional 2-3 minutes.
  4. Push the pork and veggies to one side of the pan. Crack the eggs into the empty side and scramble until fully cooked, about 1-2 minutes.
  5. Add the cooked rice into the skillet, breaking up any clumps and stirring until evenly distributed.
  6. Drizzle the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir thoroughly.
  7. Taste and adjust the salt and pepper as needed. Serve hot, garnished with extra green onions.
