Method
 

How to Make Roasted Chicken With Potatoes, Lemon, Herbs and Feta
  1. Preheat your oven to 425°F (220°C). Lightly grease a baking dish.
  2. Season the chicken thighs generously with salt and pepper. Place skin-side up in the prepared baking dish.
  3. Toss halved baby potatoes in a bowl with minced garlic and olive oil until evenly coated. Arrange around the chicken.
  4. Sprinkle fresh rosemary and thyme over the chicken and potatoes. Squeeze lemon juice over everything.
  5. Roast in the oven for 45-50 minutes, until the chicken reaches 165°F (75°C) and the potatoes are fork-tender.
  6. Remove the dish from the oven and sprinkle crumbled feta on top while warm.
