How to Make Roasted Chicken With Potatoes, Lemon, Herbs and Feta
- Preheat your oven to 425°F (220°C). Lightly grease a baking dish.
- Season the chicken thighs generously with salt and pepper. Place skin-side up in the prepared baking dish.
- Toss halved baby potatoes in a bowl with minced garlic and olive oil until evenly coated. Arrange around the chicken.
- Sprinkle fresh rosemary and thyme over the chicken and potatoes. Squeeze lemon juice over everything.
- Roast in the oven for 45-50 minutes, until the chicken reaches 165°F (75°C) and the potatoes are fork-tender.
- Remove the dish from the oven and sprinkle crumbled feta on top while warm.
