  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika or regular paprika for milder taste
  • 1 teaspoon Garlic Powder
For the Topping
  • 1 cup Feta Cheese crumbled
  • 2 tablespoons Honey or maple syrup for a vegan alternative
  • 2 tablespoons Fresh Parsley or Thyme chopped

How to Make
  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. Toss the sliced sweet potato rounds in a large bowl with olive oil, salt, black pepper, smoked paprika, and garlic powder.
  4. Arrange the seasoned sweet potato rounds in a single layer on the prepared baking sheet.
  5. Roast the potatoes in the preheated oven for 20-25 minutes, flipping them halfway through.
  6. Drizzle the hot roasted sweet potato rounds with honey as soon as they come out of the oven.
  7. Sprinkle the crumbled feta cheese over the warm sweet potato rounds.
  8. Garnish with freshly chopped parsley or thyme.
