  • 2 tablespoons Olive oil high-quality

  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
For the Whipped Feta
  • 4 ounces Feta cheese crumbled
  • ½ cup Greek yogurt
  • 2 tablespoons Lemon juice fresh
  • 1 tablespoon Olive oil for whipped feta
For Garnish
  • ¼ cup Fresh herbs (parsley, dill, or thyme)
  • Honey or hot honey optional

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and black pepper in a large bowl.
  3. Arrange the seasoned slices in a single layer on the prepared baking sheet.
  4. Roast the sweet potatoes for 20 minutes, then flip them. Return to the oven for an additional 15–20 minutes, or until golden brown and tender in texture.
  5. Blend the feta, Greek yogurt, lemon juice, and olive oil in a food processor until you reach a smooth and creamy consistency.
  6. Spread the whipped feta onto a serving plate or onto individual rounds.
  7. Top with the roasted sweet potatoes, sprinkle fresh herbs on top for garnish, and drizzle with honey if desired.
