Cooking Steps
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  3. Heat a skillet over medium heat and add olive oil. Sauté the minced garlic until fragrant, then add the fresh spinach and cook until wilted, about 2 minutes.
  4. Spoon the sautéed spinach over each salmon fillet and top them with pieces of mozzarella cheese.
  5. Bake for 15-20 minutes, or until the salmon flakes easily with a fork and the mozzarella is bubbly and golden.
  6. Serve immediately, drizzling with additional lemon juice if desired.
