Ingredients

Main Ingredients
  • 1 lb ground beef use lean beef for less fat
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz can, undrained
  • 1 can kidney beans 15 oz can, drained and rinsed
  • 1 can black beans 15 oz can, drained and rinsed
  • 1 can corn 15 oz can, drained
  • 2 tablespoon chili powder adjust to taste
  • 1 tablespoon cumin ground
  • 1 tablespoon paprika smoked for extra flavor
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup beef broth or water
  • 1 tablespoon olive oil for browning the beef

Method

Prepare the Ingredients
  1. Dice the onion and mince the garlic. This will help release their flavors when cooked.
  2. Drain and rinse the kidney and black beans, and drain the corn. This removes excess sodium and helps improve the texture.
Brown the Beef
  1. In a skillet over medium heat, add the olive oil. Once hot, add the ground beef.
  2. Cook the beef until browned, breaking it apart with a spoon, about 5-7 minutes. This step adds flavor through the Maillard reaction.
  3. Once browned, drain excess fat if necessary and transfer the beef to the crockpot.
Combine Ingredients in Crockpot
  1. Add the diced onion, minced garlic, diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and black pepper to the crockpot.
  2. Pour in the beef broth and stir everything together until well combined.
Cook the Chili
  1. Cover the crockpot with the lid and set it to low heat.
  2. Cook for 8 hours. This slow cooking allows the flavors to meld beautifully and the beans to become tender.
Serve
  1. After cooking, stir the chili and taste for seasoning. Adjust salt and pepper if needed.
  2. Serve hot, garnished with your choice of toppings such as shredded cheese, sour cream, or chopped green onions.

Notes

For a vegetarian version, substitute ground beef with textured vegetable protein or additional beans. You can also add bell peppers or jalapeños for extra flavor.
