Method
Prepare the Ingredients
Dice the onion and mince the garlic. This will help release their flavors when cooked.
Drain and rinse the kidney and black beans, and drain the corn. This removes excess sodium and helps improve the texture.
Brown the Beef
In a skillet over medium heat, add the olive oil. Once hot, add the ground beef.
Cook the beef until browned, breaking it apart with a spoon, about 5-7 minutes. This step adds flavor through the Maillard reaction.
Once browned, drain excess fat if necessary and transfer the beef to the crockpot.
Combine Ingredients in Crockpot
Add the diced onion, minced garlic, diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and black pepper to the crockpot.
Pour in the beef broth and stir everything together until well combined.
Cook the Chili
Cover the crockpot with the lid and set it to low heat.
Cook for 8 hours. This slow cooking allows the flavors to meld beautifully and the beans to become tender.
