  • 4 pieces Boneless, skinless chicken breasts

  • 4 cloves Fresh garlic minced
  • 1 medium Medium red onion sliced thinly
For the Vegetables
  • 2 cups Cherry tomatoes halved
  • 1 cup Pitted Kalamata olives
For the Sauce
  • ¼ cup Extra virgin olive oil
  • 2 tablespoons Freshly squeezed lemon juice
  • 2 teaspoons Dried oregano
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Preparation Steps
  1. Rinse the chicken breasts under cold water and gently pat them dry. Trim off any excess fat to ensure a tender bite.
  2. Slice the red onion into thin wedges and halve the cherry tomatoes.
  3. Place the chicken breasts at the bottom of your slow cooker, then layer on the onions, tomatoes, and olives.
  4. In a bowl, mix together the olive oil, lemon juice, oregano, minced garlic, salt, and pepper until well combined. Pour this over the layered ingredients.
  5. Cover and cook on low for 6 hours or high for 4 hours until the chicken is tender.
  6. Scoop out the chicken and vegetables, serving them warm with an extra drizzle of sauce.
