Preparation Steps
- Rinse the chicken breasts under cold water and gently pat them dry. Trim off any excess fat to ensure a tender bite.
- Slice the red onion into thin wedges and halve the cherry tomatoes.
- Place the chicken breasts at the bottom of your slow cooker, then layer on the onions, tomatoes, and olives.
- In a bowl, mix together the olive oil, lemon juice, oregano, minced garlic, salt, and pepper until well combined. Pour this over the layered ingredients.
- Cover and cook on low for 6 hours or high for 4 hours until the chicken is tender.
- Scoop out the chicken and vegetables, serving them warm with an extra drizzle of sauce.
