How to Make Smothered Chicken with Creamed Spinach
- Preheat your oven to 375°F. Grease the bottom of a 13×9-inch baking dish with the butter.
- Season the chicken breasts on both sides with salt, lemon pepper seasoning, and paprika. Place in the baking dish in a single layer.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add the fresh spinach, cover, and let it wilt for 1-2 minutes. Stir in the minced garlic and half-and-half, bringing everything to a gentle boil.
- Melt in the shredded mozzarella cheese by stirring vigorously on high heat for about 30 seconds until melted. Reduce heat to simmer and mix until smooth, seasoning with salt to taste.
- Sauté sliced mushrooms in a separate skillet with the remaining tablespoon of vegetable oil over medium-high heat for 1-2 minutes until caramelized.
- Remove partially baked chicken from oven. Top each breast with creamed spinach, bacon, mushrooms, and a slice of cheese.
- Bake uncovered for an additional 15-20 minutes until chicken is cooked through. Broil for 2-4 minutes until golden.
