Ingredients

  • 6 large eggs room temperature
  • ½ cup milk whole milk or cream for richness
  • ½ teaspoon salt to taste
  • ¼ teaspoon black pepper freshly ground

  • ¼ cup cooked bacon finely chopped
  • ¼ cup spinach fresh, chopped
  • ¼ cup red bell pepper finely diced

Method

Prepare the Egg Mixture
  1. Preheat your oven to 325°F (163°C). This will ensure that the egg bites cook evenly and set properly.
  2. In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until fully combined and slightly frothy. This aerates the mixture, making the bites fluffy.
  3. If you have a blender, you can blend the egg mixture for about 15 seconds to incorporate air, which will also help with fluffiness.
Add Ingredients
  1. Stir in the shredded cheddar cheese, chopped bacon, spinach, and red bell pepper into the egg mixture. Mix well to ensure even distribution of the ingredients.
Prepare the Molds
  1. Lightly grease your silicone egg bite molds with cooking spray or olive oil to prevent sticking.
  2. Pour the egg mixture into each mold, filling them about ¾ full to allow for expansion during cooking.
Bake the Egg Bites
  1. Place the filled molds on a baking tray for stability and transfer to the preheated oven.
  2. Bake for 25 minutes, or until the egg bites are set and a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Remove the molds from the oven and let them cool for about 5 minutes.
  2. Carefully pop the egg bites out of the molds. Serve warm or allow to cool completely before storing.

Notes
