Ingredients
  

For the Steak Bites
  • 1 pound Sirloin steak cut into 1-inch cubes
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black pepper use freshly cracked for best flavor
  • 1 teaspoon Smoked paprika or regular paprika
  • 1 teaspoon Onion powder
For the Sweet Potatoes and Peppers
  • 2 medium Sweet potatoes peeled and chopped
  • 1 tablespoon Olive oil or substitute another oil
  • 2 medium Bell peppers any color
  • 2 cloves Garlic freshly minced
  • 1 teaspoon Italian seasoning or customize with your favorite herbs
Optional Enhancements
  • 2 tablespoons Soy sauce or coconut aminos optional
  • 2 tablespoons Fresh parsley or cilantro for garnishing

Method
 

Preparation
  1. Microwave the sweet potatoes for 4 to 6 minutes, keeping them covered to enhance texture.
  2. Heat 1 tablespoon of olive oil in a large skillet over high heat. Season the steak cubes with salt, black pepper, smoked paprika, and onion powder and sear for 2 to 4 minutes until browned. Remove the steak and set aside.
  3. Add 1 to 2 more tablespoons of olive oil to the skillet. Toss in the par-cooked sweet potatoes and cook for 6 to 8 minutes until nicely browned. Add the bell peppers and sauté for an additional 3 to 5 minutes.
  4. Toss the minced garlic into the skillet and cook for 30 seconds. Return the seared steak and any juices back to the skillet. Drizzle in soy sauce or coconut aminos if desired and toss for 1 to 2 minutes.
  5. Sprinkle fresh parsley or cilantro before serving hot.
