How to Make Sticky Chicken Bowls
- Cook the Rice: Start by cooking the rice according to package instructions. Once done, fluff it up with a fork and set it aside to keep warm.
- Prepare the Broccoli: Chop the broccoli into small florets, then steam them in the microwave or on the stovetop until they're fork-tender, around 5-7 minutes.
- Sauté the Chicken: Cut the chicken breasts into bite-sized pieces. Toss them with olive oil, salt, pepper, chili powder, smoked paprika, onion powder, and oregano. Heat a large skillet over medium-high and cook the chicken for 6-8 minutes, stirring occasionally, until it’s golden brown and fully cooked.
- Make the Sticky Sauce: While the chicken cooks, prepare the sticky sauce. In a small saucepan, mix together soy sauce, honey, rice vinegar, minced garlic, sriracha, sesame oil, and ground ginger. Bring this mixture to a boil, then let it simmer for 4-5 minutes until it thickens significantly.
- Mix the Spicy Mayo: In a separate small bowl, combine the mayonnaise, sriracha, and a tablespoon of water. Stir until you achieve a smooth, pourable consistency for drizzling.
- Assemble the Bowls: Begin layering by placing the cooked rice at the bottom of your serving bowls. Add the steamed broccoli and generously top with the saucy chicken. Drizzle the spicy mayo on top and finish with a sprinkle of sesame seeds for that extra flair!

Notes
For the Sticky Chicken Bowls, avoid overcrowding the skillet when cooking the chicken to achieve a nice sear. Keep an eye on the broccoli while steaming to prevent mushiness.
