- Preheat your oven to 400°F.
- Whisk together the pineapple tidbits, pineapple juice, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder in a large bowl. Set the sauce aside.
- Season the chicken thighs with salt and pepper. Heat olive oil in a skillet, add diced onion and then sear chicken thighs for about 3-4 minutes per side.
- Pour the prepared pineapple sauce over the chicken thighs and transfer the skillet to the oven. Bake for 20-25 minutes or until fully cooked.
- Let the chicken rest for 5 minutes before serving. Garnish with green onions and parsley.
