Ingredients
  

For the Chicken
  • 4 pieces Boneless skinless chicken thighs
For the Sauce
  • 1 can Pineapple tidbits
  • ½ cup Pineapple juice 100% juice for best flavor
  • ½ cup Chicken stock
  • ¼ cup Soy sauce
  • 2 tablespoons Sesame oil
  • ¼ cup Brown sugar
  • 2 tablespoons Cornstarch
  • 1 teaspoon Garlic powder
For Cooking
  • 2 tablespoons Olive oil
  • 1 medium Diced onion
For Seasoning and Garnishing
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Freshly chopped green onions for garnishing
  • 2 tablespoons Fresh parsley for garnishing

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F.
  2. Whisk together the pineapple tidbits, pineapple juice, chicken stock, soy sauce, sesame oil, brown sugar, cornstarch, and garlic powder in a large bowl. Set the sauce aside.
  3. Season the chicken thighs with salt and pepper. Heat olive oil in a skillet, add diced onion and then sear chicken thighs for about 3-4 minutes per side.
  4. Pour the prepared pineapple sauce over the chicken thighs and transfer the skillet to the oven. Bake for 20-25 minutes or until fully cooked.
  5. Let the chicken rest for 5 minutes before serving. Garnish with green onions and parsley.
