How to Make Sweet Potato Hash Browns
- Begin by peeling the sweet potatoes and grating them using a box grater or food processor.
- Take a clean kitchen towel and carefully squeeze out any excess moisture from the grated sweet potatoes.
- In a large bowl, combine the grated sweet potatoes, chopped onion, minced garlic, eggs, salt, and pepper. Mix until all ingredients are well incorporated.
- Pour the extra virgin olive oil into a skillet and heat over medium heat until it becomes shimmering hot.
- With your hands, shape small patties of about half an inch thick from the mixture and place them in the skillet.
- Let the patties cook for approximately 5 minutes on one side until golden brown, then flip and cook for another 5 minutes.
