How to Make Sweet Potato Hash Browns
  1. Begin by peeling the sweet potatoes and grating them using a box grater or food processor.
  2. Take a clean kitchen towel and carefully squeeze out any excess moisture from the grated sweet potatoes.
  3. In a large bowl, combine the grated sweet potatoes, chopped onion, minced garlic, eggs, salt, and pepper. Mix until all ingredients are well incorporated.
  4. Pour the extra virgin olive oil into a skillet and heat over medium heat until it becomes shimmering hot.
  5. With your hands, shape small patties of about half an inch thick from the mixture and place them in the skillet.
  6. Let the patties cook for approximately 5 minutes on one side until golden brown, then flip and cook for another 5 minutes.
  7. Once cooked, transfer the hash browns to paper towels to drain excess oil before serving.
